How to Measure Ingredients Without a Kitchen Scale

You can get within about 5% of a target weight without a scale, provided you level every spoon and use the right per-teaspoon figure: 4.2 g for granulated sugar, 6.0 g for table salt, 2.6 g for spooned flour. Technique matters more than equipment — the same spoon, filled two different ways, varies by more than 30%.

What volume measurement can and cannot do

It helps to be clear about the size of the problem before solving it. A careful cook with measuring spoons and a reference table can hit a target weight within roughly 5% for free-flowing ingredients, 10% for powders that clump, and considerably worse for flaked or fibrous ones.

That is good enough for most of what happens in a kitchen. A cake that is 5% out on sugar is a cake nobody can distinguish from the intended one. Seasoning is adjusted by taste anyway. Even bread tolerates a few percent on flour, because you correct with feel during kneading.

It is not good enough where a recipe is a ratio. Brining, curing, fermenting, tempering chocolate and anything using a baker's percentage all treat the numbers as proportions of a total, so errors compound rather than average out. Those want a scale, and no technique substitutes.

The realistic goal, then, is not to replicate a scale. It is to remove the variability that makes volume measurement unpredictable, so that your teaspoon means the same thing today as it did last week.

The spoon-and-level method

Almost all of the achievable improvement comes from one habit, applied consistently.

Loosen the ingredient in its container first. Powders settle and cake in storage, and a spoonful lifted from compacted flour or clumped baking soda is denser than the reference figure assumes. Stir it with a fork, or shake the bag.

Then fill the spoon without pressing. Spoon the ingredient in, or pour it in, but do not dip the measuring spoon into the container and drag it out — that compacts the material against the spoon walls. Overfill deliberately so the spoon is heaped.

Finally sweep it level with a straight edge. The back of a knife, the edge of a spatula, the flat side of a chopstick — anything rigid and straight. Not your finger, which is curved and presses down. The difference between a heaped spoon and a levelled one is 30-50% for most powders, which is far larger than any error in the density table.

Applied to flour, this is what turns an unpredictable cup into a 125 g cup. Applied to cocoa, it is the difference between 1.8 g and something closer to 2.5 g per teaspoon.

Calibrating with water

Water is the free calibration standard every kitchen already has. It weighs almost exactly 1 gram per millilitre, so a US teaspoon of water is 4.9 g and a tablespoon is 14.7 g.

That gives you a way to check your spoons without a scale at all. Fill your teaspoon with water and empty it into a measuring jug ten times. If the jug reads close to 49 mL, your spoon is honest. If it reads 45 mL or 55 mL, your spoon is 10% out and every conversion you do with it inherits that error.

It also gives you a way to measure by displacement. Solid fat is the classic case: to measure 19 g of butter without a scale, put 100 mL of water in a jug and add butter until the level reaches roughly 120 mL, then pour the water off. It is fiddly and it works.

  • 1 tsp water = 4.9 g = 4.93 mL.
  • 1 tbsp water = 14.7 g.
  • 1 US cup water = 235 g.
  • 1 tsp milk = 5.1 g — close enough to water that the distinction rarely matters.
  • 1 tsp olive oil = 4.5 g. All cooking oils are within a percent or two of each other.

The reference weights to keep on hand

With levelled spoons and these figures, most conversions become one division. Grams divided by grams-per-teaspoon gives teaspoons, and teaspoons multiplied by the same figure gives grams back — this is the whole of converting grams to teaspoons without a scale.

  • Granulated sugar 4.2 g/tsp — the most reliable of the lot, and the one to test a converter against.
  • Brown sugar (packed) 4.6 g/tsp. Loosely spooned it is around a third less, so the packing is not optional.
  • Powdered sugar 2.5 g/tsp — barely 60% of granulated, because it is mostly air.
  • Table salt 6.0 g/tsp; fine sea salt 5.5 g; Morton kosher 4.8 g; Diamond Crystal kosher 2.8 g.
  • All-purpose flour 2.6 g/tsp spooned; add roughly a fifth if scooped.
  • Baking soda 4.8 g/tsp; baking powder 4.0 g/tsp.
  • Active dry yeast 3.1 g/tsp; instant yeast 3.3 g/tsp.
  • Cocoa powder 1.8 g/tsp; cornstarch 2.5 g/tsp; ground cinnamon 2.6 g/tsp.
  • Honey 7.0 g/tsp — the heaviest thing in the kitchen by volume.

The ingredients where this does not work

Some things resist volume measurement no matter how careful you are, and knowing which they are is worth more than any technique.

Flaked and coarse salts are the worst offenders. Their weight per teaspoon depends on how the flakes happen to land, and the same spoonful tapped twice can change by several percent. Diamond Crystal at 2.8 g and table salt at 6.0 g are the same chemical, so an error here is entirely down to geometry — and coarse sea salts vary so widely between producers that no single figure is honest.

Grated cheese, chopped herbs, shredded coconut and anything fibrous have no stable packing state at all. A cup of grated parmesan can vary by a factor of two depending on the grater. Recipes that give these by volume are being deliberately approximate.

Sticky liquids are a different failure. Honey at 7.0 g per teaspoon is precise in principle, but a meaningful fraction stays in the spoon. Oil the spoon first, or measure honey directly into the mixing bowl and accept the approximation.

Fresh yeast, butter above a tablespoon, and anything sold in blocks are simply better cut to size than spooned. A 250 g block scored into quarters is more accurate than any volume method.

Everyday objects as a rough scale

When you have neither a scale nor measuring spoons, ordinary objects give you a starting point. These are approximations and should be treated as such, but they are considerably better than guessing.

A standard flatware teaspoon — the one you stir tea with — holds roughly a level measuring teaspoon, though the range across cutlery patterns runs from about two thirds to one and a half times. A flatware soup spoon is nearer a tablespoon. If you use cutlery, use the same piece every time so at least your error is consistent.

Coins are surprisingly useful as scale checks because their masses are legally fixed. A US nickel is exactly 5.00 g and a US quarter is 5.67 g; a UK 2p coin is 7.12 g and a 1p is 3.56 g. Two nickels weigh 10 g, which is enough to verify that a cheap scale is reading honestly.

Packaging is the other free reference. A 7 g yeast sachet, a 113 g stick of butter, a 250 g block: these are labelled weights you can divide. Half a sachet of yeast is 3.5 g, which is 1.13 teaspoons of active dry — often easier to judge by halving the packet than by measuring at all.

The cupped palm is the technique professional kitchens actually use for salt, and it is worth calibrating once. Most adults' cupped palms hold somewhere near a tablespoon of Diamond Crystal kosher salt, which is about 8.4 g — but the same palm of table salt is 18.0 g, so the technique only transfers if the salt does.

Building consistency, which is what actually matters

Absolute accuracy is less useful than repeatability. If your teaspoon of flour is consistently 5% heavy, your first bake will be slightly off and every bake after you have adjusted the recipe will be right. If it is randomly 5% either way, you can never adjust.

So pick one set of measuring spoons and use it for everything. Pick one filling technique and never vary it. Store powders in containers you can stir rather than bags you compress. Write down what you did when a bake works.

And if you decide to buy a scale, buy one with 1 g resolution for general use and 0.1 g if you bake bread or work with leavening seriously. It is the cheapest accuracy improvement available in a kitchen, and it makes every conversion in this article unnecessary.
