Common Baking Measurement Mistakes (And How to Avoid Them)

The single most expensive baking mistake is scooping flour from the bag, which adds around 20% — about 25 extra grams per cup. The rest of the common errors follow the same pattern: they are systematic, they always push in the same direction, and none of them announce themselves until the bake comes out wrong.

Scooping flour instead of spooning it

Flour is the ingredient most affected by technique and it is used in the largest quantity, so it does the most damage. The reference figure of 2.6 g per teaspoon — 125 g per cup — assumes flour that has been spooned loosely into the measure and levelled off.

Dip the cup into the bag instead and you compress the flour against the walls as it fills. That routinely adds 20%, taking a cup from 125 g to around 150 g. In a three-cup cake recipe you have added most of an extra half cup of flour that the recipe never accounted for.

The result is predictable: dry, tough, dense, and pale, because there is not enough sugar and fat left in proportion to tenderise the crumb or brown the crust. Bakers usually blame the oven or the recipe. It was the cup.

The fix is either the spoon-and-level method — fluff the flour in the bag, spoon it into the cup without tapping, sweep level — or a scale. A scale removes the question entirely, which is why almost every professional recipe gives flour by weight.

Ignoring the words "packed", "sifted" and "levelled"

These words look like style. They are instructions, and each of them changes the weight of the measurement by a large margin.

"Packed" appears with brown sugar because brown sugar is moist and clumps rather than pours. Packed firmly, a teaspoon is 4.6 g. Spooned in loosely it can weigh a third less. A recipe that says "1 cup packed brown sugar" and gets a loosely filled cup is short by an amount that shows up directly as less moisture and less chew.

"Sifted" changes the weight by changing the aeration, and where it sits in the phrase matters. "1 cup sifted flour" means sift first, then measure. "1 cup flour, sifted" means measure first, then sift. Those are different quantities — the first is meaningfully lighter — and the comma is doing all the work.

"Levelled" is the default for every dry measuring spoon and cup even when nobody writes it. A heaped teaspoon of powdered sugar can hold half again as much as a level one, which turns 2.5 g into something closer to 3.8 g.

Assuming one grams-to-teaspoons number works for everything

This is the error that a conversion tool is supposed to prevent, and the reason so many of them fail to. Grams measure mass; teaspoons measure volume. Nothing converts between them without knowing the density of the specific substance in the spoon.

The spread is not small. A teaspoon holds 1.8 g of cocoa powder and 7.0 g of honey — a factor of nearly four between two ordinary cupboard ingredients. Between the two things a generic calculator is most likely to default to, sugar at 4.2 g and water at 4.9 g, there is already a 15% gap.

Worked through: if you need 10 g of cocoa powder and convert it using sugar's density, you get 2.38 teaspoons when the correct answer is 5.56. You would put in less than half the cocoa the recipe asked for, and no amount of care with the spoon would save you.

The rule is simple: if a converter does not ask which ingredient you are measuring, it has silently chosen one for you, and you have no way of knowing whether that choice matches your recipe.

Confusing teaspoons and tablespoons

A tablespoon is exactly 3 teaspoons, so mixing them up is a threefold error — larger than any density mistake you can make.

The abbreviations are the culprit. "tsp" and "tbsp" are clear enough, but recipes still use "t" for teaspoon and "T" for tablespoon, which differ by a single keystroke and survive neither photocopying nor retyping. Handwritten recipe cards are worse still.

The ingredients where it does the most harm are the potent ones. A tablespoon of table salt is 18.0 g against 6.0 g for a teaspoon — the difference between a seasoned dish and one you throw away. A tablespoon of baking soda instead of a teaspoon is 14.4 g of an ingredient that tastes soapy at any excess at all.

When a quantity looks implausible, check it against the flour. Leavening and salt in a standard cake sit at roughly 1-2% of the flour weight. Anything an order of magnitude away from that is a transcription error, not a bold recipe.

Measuring liquids and solids in the wrong vessel

Dry measuring cups are designed to be overfilled and swept level. Liquid measuring jugs have the graduation below the rim so the contents can be carried without spilling, and they are meant to be read at eye level with the liquid at rest.

Use a dry cup for liquid and you either underfill it, because you stopped short of the brim to avoid spilling, or you fill to the brim and carry a meniscus that will not survive the walk to the bowl. Use a jug for flour and you cannot level it at all, so you are eyeballing a graduation against an irregular, sloped surface.

Small liquid volumes are the exception: for anything at teaspoon scale, a measuring spoon is correct for both. A teaspoon of vanilla extract weighs 4.3 g, a teaspoon of olive oil 4.5 g, a teaspoon of milk 5.1 g, and a teaspoon of honey 7.0 g. Fill the spoon to the rim rather than levelling it — there is nothing to level.

  • Dry cups and spoons: overfill, then sweep level with a straight edge.
  • Liquid jugs: set on a flat surface, read at eye level, do not lift to check.
  • Sticky liquids: oil the spoon first, or measure them into the bowl on a tared scale.
  • Butter under a tablespoon: use a spoon (4.7 g per teaspoon softened); above that, use the wrapper markings or a scale.

The ingredients where a unit is not a unit

Some recipe quantities look like measurements but are really references to a product that varies, and no conversion table will warn you.

A "stick" of butter is a US retail format: 113 g, 8 tablespoons, 24 teaspoons. It has no meaning outside North America, and the 250 g blocks sold elsewhere do not divide into it neatly. Cut by weight rather than by eye — the wrapper markings on a stick are printed, not measured, and they drift once the butter softens.

A "sachet" of yeast is 7 g in the US and UK and 11 g in France and Germany, which is 2.26 and 3.55 teaspoons of active dry respectively. A recipe that says "one packet" is ambiguous the moment it crosses a border.

A "large egg" is 50 g of shelled egg in the US and 58-64 g in Europe. Three large eggs in a British recipe can be 40 g more egg than three in an American one, which is a noticeable change in hydration for a cake.

A "can" of anything varies by market, and "a knob of butter" or "a glug of oil" are not measurements at all. Where precision matters, convert them: a tablespoon of olive oil is 13.5 g and a tablespoon of softened butter is 14.1 g.

Scale mistakes, which are rarer but not rare

Owning a scale removes most of the errors above and introduces a shorter list of its own.

Forgetting to tare between additions is the common one — you add the sugar, read the total, and enter it as the sugar weight. Working in a single bowl and taring after each ingredient avoids it, but only if you never look away mid-pour.

Resolution is the second. A scale that reads in 1 g steps cannot honestly measure a quarter teaspoon of anything: at that range you are reading one or two digits and the rounding error is a large fraction of the dose. Small quantities still belong on spoons unless you have a 0.1 g scale.

The third is drift and units. Scales left with weight on them, or with a dying battery, will read low. And a scale switched to ounces while you read a recipe in grams produces an error of more than 28 times, which is at least the kind of mistake you notice immediately.
