Grams to Teaspoons: Why It Depends on the Ingredient
There is no single conversion from grams to teaspoons. A teaspoon is a fixed volume of 4.93 millilitres, but what fills it varies in weight by a factor of four — from 1.8 g of cocoa powder to 7.0 g of honey. The ingredient is not a detail; it is the entire conversion.

The mistake everyone makes first
Search for "grams to teaspoons" and you will find dozens of tools that give you one number. Type in 10, get out 2. They are treating grams and teaspoons as though they were two ways of writing the same measurement, like inches and centimetres.
They are not. Inches and centimetres both measure length, so one converts to the other by a constant. Grams measure mass — how much matter is there. Teaspoons measure volume — how much space it occupies. Those are different physical quantities, and nothing converts between them without a third piece of information: how tightly that particular substance packs its mass into space. That is density.
This is why a scale and a measuring spoon disagree in ways that feel arbitrary. Fill a teaspoon with table salt and it weighs 6.0 g. Fill the same spoon with cocoa powder and it weighs 1.8 g. Same spoon, same fill level, more than three times the weight. Nothing has gone wrong; you have simply measured two substances with very different densities.
How many grams are in a teaspoon of each ingredient?
The spread is bigger than most cooks expect, and the extremes are not exotic ingredients — they are things already in your cupboard.
Read the list in whichever direction you need. Multiply by the figure to go from teaspoons to grams; divide by it to go from grams to teaspoons. That single number is the whole of the tsp-to-g conversion for that ingredient, and it is the only thing a generic calculator cannot know.
- Cocoa powder: 1.8 g per teaspoon. Mostly air, and it clumps around that air rather than settling out of it.
- Powdered sugar: 2.5 g. Milled to a dust and cut with cornstarch, so a spoonful is largely space.
- All-purpose flour: 2.6 g. Light, and highly sensitive to whether you spoon it in or scoop it.
- Active dry yeast: 3.1 g. Coarse granules with gaps between them.
- Granulated sugar: 4.2 g. Even, free-flowing crystals — the most predictable ingredient in the kitchen.
- Baking soda: 4.8 g. Heavy for a powder, which is part of why it is measured in such small amounts.
- Water: 4.9 g. The reference case, since water weighs almost exactly 1 g per millilitre.
- Table salt: 6.0 g. Dense cubic crystals that leave almost no air between them.
- Honey: 7.0 g. The heaviest thing you will ever put in a teaspoon.
Why fine ingredients are heavier, not lighter
The intuition trips people up. Fine powders feel light — cocoa and powdered sugar are the lightest things in the list — yet fine salt is the heaviest dry ingredient. What is going on?
Two things are being confused: the density of the material itself, and the density of a pile of it. Salt crystals are dense little cubes and they stack efficiently, leaving very little air. Cocoa particles are irregular and cling to each other, building a structure that traps air the way a snowdrift does. The material matters, but so does the shape of the pieces and how they arrange themselves.
Kosher salt is the clearest demonstration of this, because the material is identical to table salt — sodium chloride, chemically the same — and only the crystal shape differs. Diamond Crystal's hollow, flaky pyramids stack loosely: 2.8 g per teaspoon. Fine table salt's dense cubes stack tight: 6.0 g. Same substance, more than double the weight in the same spoon, purely because of geometry.
What this means in practice
Three things follow from all of this, and they are worth internalising because they cover almost every conversion mistake people make.
First, never trust a conversion that did not ask what you were measuring. If a calculator gives you a number without an ingredient dropdown, it has silently picked one for you — usually water or sugar — and you have no way of knowing whether that applies to your recipe.
Second, the error is not random, it is systematic. If you convert 10 g of yeast using sugar's density, you will be wrong in the same direction every single time, and by a lot: 3.2 teaspoons is the right answer and 2.4 is what you would get. That is not a rounding difference, it is a third of the dose.
Third, the ingredients where this matters most are the ones measured in the smallest amounts. Nobody ruins a cake by being 5% out on flour. People ruin bread by being 30% out on yeast, and dinner by being 100% out on salt — precisely because those are measured in teaspoons, where the density assumption is doing all the work.
The one number worth memorising
If you want a single rule of thumb: most dry baking ingredients land between 4 g and 6 g per level teaspoon, and 1 gram is roughly a quarter teaspoon. That will get you within striking distance for sugar, salt, baking soda and baking powder.
It will not get you close for yeast, cocoa, powdered sugar or flour, and it will be badly wrong for honey. Which is the whole point: a rule of thumb is a fallback for when you have no better option, not a substitute for knowing which ingredient you are holding.
