Converting Yeast: Grams to Teaspoons for Baking and Bread-Making

One level teaspoon of active dry yeast weighs 3.1 grams; instant yeast weighs 3.3 grams. A standard 7 g sachet is therefore about 2¼ teaspoons of active dry or slightly over 2 teaspoons of instant. Yeast is the one ingredient where getting this wrong is immediately visible in the result.

Yeast grams to teaspoons: the numbers

Yeast is sold by weight and used by volume, which is why this conversion comes up in nearly every bread recipe. Divide grams by 3.1 for active dry yeast, or by 3.3 for instant. To go the other way — yeast tsp to g — multiply by the same figure.

  • 1 g of active dry yeast = 0.32 tsp.
  • 5 g = 1.61 tsp active dry, 1.52 tsp instant.
  • 7 g (one sachet) = 2.26 tsp active dry, 2.12 tsp instant.
  • 10 g = 3.23 tsp active dry, 3.03 tsp instant.
  • 11 g = 3.55 tsp active dry — some European brands sell 11 g sachets for 1 kg of flour.
  • 1 tsp = 3.1 g active dry, 3.3 g instant.

Two differences, not one

Active dry and instant yeast differ in two independent ways, and nearly every guide mentions only one of them. Conflating the two is the most common yeast-conversion error.

The first difference is weight per teaspoon. Active dry has coarser granules that leave more air between them, so a teaspoon holds 3.1 g. Instant is milled finer, packs tighter, and comes to 3.3 g — about 6% more. This is a unit conversion, and it is what a calculator handles for you.

The second difference is potency. Instant yeast contains more viable cells per gram and is designed to go straight into dry ingredients without proofing. Bakers typically use about 25% less instant yeast by weight to get the same rise. This is a recipe decision, not a unit conversion — no calculator should apply it silently, because whether you want the same dose or the same rise depends on what you are making and how long you are fermenting.

Get only one of the two right and your dough will still be off. Substituting instant for active dry means converting the weight and then reducing the quantity.

Why yeast punishes small errors

Flour tolerates a 5% error without complaint. Yeast does not, and the reason is that yeast is not an ingredient in the ordinary sense — it is a population of living organisms whose growth compounds over hours.

A quarter-teaspoon error on a single-loaf recipe calling for one teaspoon is a 25% dose change. Under-dose and the dough underproves: it rises slowly, never develops the gas structure it needs, and bakes dense. Over-dose and it rises fast, exhausts its food supply, over-proofs and collapses — and tastes distinctly yeasty into the bargain, because rapid fermentation produces different flavour compounds than slow fermentation does.

This is compounded by the fact that yeast quantities are small. The whole dose for a 500 g flour loaf is around 7 g. There is no room for the sloppiness that a 500 g flour measurement absorbs without anyone noticing.

The sachet problem

A standard sachet is 7 g, designed for roughly 500 g of flour. That works beautifully as long as you are making exactly one standard loaf. The moment you scale a recipe, you are left with a fraction of a sachet and no obvious way to measure it.

Half a sachet is 3.5 g, which is 1.13 teaspoons of active dry yeast — call it a generous teaspoon. Two-thirds of a sachet is about 4.7 g, or 1.5 teaspoons. These are exactly the conversions that send people looking for a calculator mid-recipe, hands covered in flour.

It also explains why measuring a "flat 2 teaspoons" instead of the true 2¼ leaves you about 10% short of a full sachet — a small enough gap to seem harmless, and large enough to slow a rise noticeably on a cold day.

Fresh yeast, and the three-times rule

Fresh yeast — also called compressed or cake yeast — is a third case, and it does not convert the same way. It is roughly 70% water, so you need about three times the weight to get the same leavening.

One teaspoon of active dry yeast (3.1 g) is equivalent to about 9 g of fresh yeast. Going the other way, a 42 g block of fresh yeast replaces about 14 g of active dry, or roughly two sachets.

Fresh yeast is normally weighed rather than spooned, because it is a moist solid rather than a granule — you cannot meaningfully level it in a measuring spoon. If a recipe gives fresh yeast in teaspoons, it is being approximate, and converting to dry yeast by weight is more reliable.

When to reach for a scale instead

For everyday bread, teaspoon measurement is fine and this conversion is accurate enough. For anything where fermentation timing is the point — a long cold retard, a sourdough schedule with a small commercial-yeast assist, a recipe you intend to repeat identically — use a 0.1 g scale.

The reason is not that the conversion is wrong, but that yeast settles and compacts in storage. A teaspoon scooped from the bottom of a jar that has been open for three months genuinely weighs more than one from a fresh sachet, and no reference table can know which one you have.
